Ingredients

  • Chicken seekh kababs 6-8
  • Tomatoes pureed 3 medium
  • Oil 2 tablespoons
  • Bay leaves 2
  • Green cardamoms 4-5
  • Cloves 3-4
  • Cumin seeds 1 teaspoon
  • Ginger finely chopped 1 tablespoon
  • Garlic finely chopped 1 tablespoon
  • Onions finely chopped 2 medium
  • Turmeric powder 1/4 teaspoon
  • Red chilli powder 1/2 teaspoon
  • Coriander powder 1 teaspoon
  • Meat masala powder 2 teaspoons
  • Roasted cumin powder 1/4 teaspoon
  • Salt to taste
  • Garam masala powder 1/2 teaspoon
  • Fresh mint leaves 15-16
  • Juice of 1 lemon

Chicken Seekh Kebabs – DIY


Ingredients

  1. Chicken mince – 500 grams
  2. Green chillies – finely chopped 1-2
  3. Onion – finely chopped 1 medium
  4. Ginger – finely chopped 1 inch piece
  5. Garlic – finely chopped 4 cloves
  6. Cashewnuts – finely chopped 2 tablespoons
  7. Chaat masala – 1 teaspoon
  8. Garam masala – 1 teaspoon
  9. White pepper powder – 1 teaspoon
  10. Fresh coriander leaves – 2 tablespoons
  11. Lemon juice – 1 tablespoon
  12. Salt to taste

Spicy Garlic Eggs


Eggs cooked with plenty of garlic make a delicious dish.

Ingredients

  • Boiled eggs – Peeled 5
  • Spring onions – 4
  • Garlic cloves – finely chopped 8-10
  • Green capsicum – 1 large
  • Oil – 1 tablespoon
  • Dried red chillies – 2
  • Red chilli paste – 2 tablespoons
  • Tomato ketchup – 2 tablespoons
  • Soy sauce – 1 teaspoon
  • Vinegar – 2 tablespoons
  • Black pepper powder – 1/4 teaspoon
  • Sugar – 1/4 teaspoon
  • Salt to taste
  • Manchurian masala – 1 tablespoon

Method

  • Step 1
    Roughly chop green capsicum and spring onions. Make deep vertical gashes on the eggs.
  • Step 2
    Heat oil in a non-stick wok. Break red chillies and add to the wok. Add garlic and sauté till golden.
  • Step 3
    Add spring onions and green capsicum and mix. Add red chilli paste, tomato ketchup, soy sauce, vinegar, black pepper powder and sugar and mix.
  • Step 4
    Add eggs, salt, Manchurian masala and ½ cup water and cook for 1-2 minutes.

Transfer into a serving dish and serve hot.
